  1. Have you tried coconut sugar/syrup? That’s the new thing these days, which is supposed to have a very low glycemic index – though of course, as you point out in this post, that was said about agave nectar originally. I like it and it doesn’t give me a sugar rush (though I might not be as sensitive to it as you are…).

      I haven’t tried coconut sugar/syrup yet… I’ve also seen “coconut palm sugar”—but I haven’t done any research on any of it yet… I plan to at some point, but I’ve been very happy with maple syrup!

      I am particularly sensitive to sugar, I’m kind of an addict, I’m laying off it big time again. Before I got pregnant I didn’t have processed sugar for almost a year. I need to get that kind of self-discipline back. (Damn kid ruined everything.)
